NATURAL UNPASTEURIZED HONEY

Chatsworth Honey was established in 1923.  Today, Toby Bruce and Kelly Rogers manage 700 beehives for apple pollination, bee breeding, and honey production.
Chatsworth honey is gathered from the pristine pastures and wildflowers of rural Grey County. Many of the beehives are located along the protected lands of the Niagara Escarpment as it winds its way north to Georgian Bay. This unique terroir gives Chatsworth Honey its superior flavour.
 
 At the honey house, special care is taken to use gentle processing techniques to maintain the delicate flavours and natural properties of honey.  All Chatsworth honey is unpasteurized.  The floral source of honey determines its colour and flavor; from mild and light Summer Flower honey, a mix of clover, alfalfa and star thistle; to Autumn Blossom with its hint of caramel, collected from goldenrod and wild aster.  In certain years, basswood trees can yield a sharp honey with a hint of mint. Amber buckwheat honey has a robust earthy flavour. 

Raw honey, settled but not strained, is freshly bottled after extracting. The only thing more natural is comb honey, straight from the beehive.
 
Chatsworth Honey also produces beeswax, a by-product of the extracting process, and hand-dips 100% pure beeswax candles.
 
A member of the Ontario Bee Breeders Association, Chatsworth Honey has a reputation for breeding honey bees resistance to the mites and diseases that can negatively impact the health of colonies. Each spring, Chatty queens and bees are sold locally and across Ontario to fellow beekeepers.
 
Chatsworth Honey also provides honeybees colonies for pollination services in the apple orchards of the Georgian Triangle.
